Breakfast crepes

These delicious gluten free crepes were born by accident. I was experimenting with gluten free pancake mixes. The resulting pancake was so thin that I used it as crepes. You can certainly impress your guests with this delicious plate. If you like sweet, you can stuff them with your favorite ingredient like caramel, chocolate, syrop or jelly.The possibilities are endless. Let your imagination go wild.



  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon oil ((canola, olive, sunflower))
  • 1 cup almond milk
  • 1/4 cup corn starch
  • 3/4 cups rice flour
  • 1/3 cup sugar


Step 1

Mix all the ingredients in a blender or beater.

Step 2


Pour the batter little by little into the frying pan with a little bit of butter slowly moving the pan in order to spread the batter.

Step 3


When one side is ready, turn the crepe over.

Step 4


Once cooked, roll the crepe and add maple syrup and some fruits.
