Commercial gluten free bread is very expensive but this recipe is very cheap and if you have a bread-machine it’s just wonderful. You can eat it with tea, coffee or hot cocoa or toasted with jam.
Ingredients
- 2 eggs
- 1/4 cup oil (any vegetable oil, I used coconut.)
- 1 1/2 cup of hot water
- 1/2 cup of sugar or honey
- 1 teaspoon of xanthan gum
- 1 tablespoon of vanilla isolated protein (vegan)
- 1 cup of cornstarch
- 2 cups of rice flour
- 2 teaspoons of quick yeast
- 1 cup of blueberries
- 1/2 cup of chopped almonds
Directions
Step 1
If you have a bread-machine, just pour the ingredients following your bread-machine’s directions, except for the blueberries. If your machine has quick bread mode, select it because it only needs to rise once. If you don’t have a bread-machine, you can mix all your wet ingredients first and then add the dry ingredients. Mix well and add the blueberries at the end.
Step 2
Once the machine has mixed all the ingredients, add the blueberries. If you don’t have bread-machine just place the batter in an oven pan and place it in a warm place for 40 min. Then bake it for 40 to 50 min at 350 F (180 C) or until it is golden.
Step 3
Once done, take it off the pan and place it on a cooling rack for 20 min. Your bread is ready to be served.
