Fake omelette

These is a great breakfast, zero hunger for hours! Lots of veggies, full of flavor and did I mention it’s vegan? Plus, if you leave out the corn, it would be grain free.



  • 315 g firm tofu (more or less)
  • 1/3 cup chickpea flour
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon paprika
  • 1 teaspoon ginger
  • 2 tsp ground chia seeds
  • 2 tablespoons soy sauce (gluten-free)
  • 4/3 teaspoon baking soda
  • 1/2 cup vegetable broth
  • 1-1 1/2 cup cooked vegetables (can be leftovers or frozen)


Step 1


Process all the ingredients except for the veggies.

Step 2


Mix the dough with the vegetables.(it should be thick if not, add a little bit of chickpea flour).

Fry spoonfuls of the mixture with olive oil. Once is done, flip it and brown the other side. You can serve them with sauce or gravy .
