Mushroom Egg Enchilada

Breakfast energy!  Delicious to have for breakfast. Lots of energy during the day!



  • 2 eggs
  • 4 mushrooms
  • 2 slices of onion (chopped)
  • 1/2 cup chopped spinach
  • 1/2 half teaspoon of olive oil (optional)
  • salt and pepper to taste


Step 1


Oil the pan. Once the pan is hot enough, pour in some oil. Put in the onions and mushrooms. As they cook, have a spatula on hand to push them around the pan so they don’t stick. Add the spinach and some salt and pepper to taste, when all is cooked, remove it from the stove.

Step 2


Whisk the eggs vigorously with a fork until the egg whites and yolks are completely blended. Pour the egg mixture into a hot pan spreading it so it looks like a round omelette. When one side is cooked, flip it with a spatula to cook the other side. Place it on a plate.

Step 3



Add half of the the mushrooms and spinach in the center of the egg and roll up like a taco. Repeat step 2 to have two enchiladas. You can cover them with a little cheese almond or alone are very good too.
