Oats and Buckwheat Pancakes

These energizing and nutritious gluten free pancakes are great for people with gluten sensitivity. Buckwheat is a fruit seed that contains no gluten. Buckwheat is considered by many as one of the world’s healthiest foods. Despite it’s name it is not a grain neither is it a type of wheat. I recommend you to make you gluten free flour before hand and store in a container. This way yo will be saving a lot of time. Your kids will love you even more with this delicious recipe.

Ingredients

  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon oil (any vegetable oil, olive, coconut, sunflower.)
  • 1/3 cup sugar
  • 1 cup milk (any non diary milk, I used coconut milk.)
  • 1/2 cup oats flour (gluten free)
  • 1/2 cup buckwheat flour

Directions

Step 1

Mix all the ingredients until smooth. I find it very useful and easy to use a manual blender.

Step 2

Heat a lightly oiled frying pan over medium heat. Pour batter onto the pan. When you see bubbles it’s time to turn them over. Brown on both sides.

Step 3

Serve hot and add your favorite syrup. I like it with true maple syrup.
