This is a very easy and quick recipe. Perfect for breakfast. It tastes better with fresh vegetables, but when you are in a hurry, you can always use a pack of mixed frozen vegetables. There are many varieties at the supermarket. You can cook them with almost any vegetables. I love eating them in the morning, preceded by a delicious fruit cocktail and followed by a cafe late with soy or almond milk. I try to avoid milk products whenever possible.
Ingredients
- 1/4 cup of veggies (any veggie, I used carrots, broccoli and mushrooms)
- 1 egg
- 1 pinch of salt
Directions
Step 1
Place the veggies in a pan and let them cook for a bit.
Step 2
Beat the egg until they turn a pale yellow. Pour the egg into the pan. Once cooked on one side, flip it carefully.
Step 3
When the other side is cooked, just add some salt serve.
