Spinach crepes

Tasty and vegan!

 Ingredients

  • 1 2/3 soymilk
  • 1/2 cup buckwheat flour
  • 1/4 cup gluten free flour
  • 1/4 cup chickpea flour
  • 1 tablespoon tapioca flour
  • 1/2 teaspoon salt

Filling

  • 1 package of spinach
  • 1/2 cup corn kernels or chopped mushrooms
  • 1/4 chopped onion
  • 1 teaspoon of olive oil
  • garlic salt (to taste)

Directions

Mix all the ingredients for the crepes in a blender or with a mixer. If the dough is too thick add a little bit of milk.

With a little bit of oil, just for the first one, add the batter swirling the pan. Once is cooked on one side, turn it.

In a pan fry the onion and add the spinach, the corn and garlic salt.

You can add to the mix some almond cream. Put some of the spinach in the middle of the crepes and roll them up. Place them in a dish with almond cream (almond cheese).
