Ingredients

  • 1 medium eggplant
  • 1/2 cup of pasta sauce
  • 1 teaspoon Italian herbs
  • 2 teaspoons of olive oil
  • 1/2 cup of almond cheese
  • 2 tomatoes (or big mushrooms)

Cut the eggplant into round slices 1/2 inch thick. Place the slices o a baking sheet with foil or parchment paper. Apply a thin layer of olive oil and sprinkle some Italian herbs.

Spread tomato sauce on them. Spread almond cheese on top.
